Grilled Wild Swordfish Kebabs

 

Ingredients:

  • 2 packages of Sea Crave Swordfish, cut into 1-inch pieces

  • 1½ tablespoons extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon dried rosemary

  • 2 teaspoons honey (optional)

  • ½ teaspoon salt

  • ¼ teaspoon freshly ground black pepper

  • 5 garlic cloves, grated

  • Sliced red onion, cut into 1-inch pieces

  • Red bell peppers, cut into 1-inch pieces

  • Yellow bell peppers ,cut into 1-inch pieces

  • 4 (10-inch) skewers

 

How To Make It:

  1. Marinade: Combine the first eight ingredients in a large ziplock plastic bag, including the Swordfish. Seal and marinate in the refrigerator for 30 minutes, turning once.

  2. Preheat a grill to medium-high heat. (If using wooden skewers, soak in water for at least 30 minutes before grilling.) Coat grill with cooking spray.

  3. Remove the Swordfish from the bag; discard marinade. Thread the Swordfish, onions, and bell peppers alternately onto each of 4 (10-inch) skewers. Place on the grill; grill until lightly charred and grill-marked and the swordfish is cooked through, 3 to 5 minutes per side. Turning once. Enjoy!
